Method 1: Foil Packets

Step 1:

Place vegetables on a piece of foil that is large enough to fold over them. Fold up the edges and pinch together, leaving the top open. Drizzle oil and spices over the top. Using your hands or a spatula, toss until well coated.

Seal the foil pouch and place on grill.

Cook for 8 to 10 minutes, checking occasionally to see if done.

Method 2: Grill Pan

Step 1:

Slice vegetables and lay on a baking sheet covered with parchment paper (for easy clean-up). Brush all vegetables with marinade, flip and brush again. Cover and let sit for at least two hours before grilling.

Move vegetables to a grill pan. Place grill pan on the grill and cook vegetables on each side for 2 to 3 minutes, brushing with the marinade every minute or so. Continue to cook and flip vegetables until lightly charred, 6 to 10 minutes.
